Chocolate Pistachio Maca Energy Balls

Makes 28 energy balls


A handy snack to eat on the go or eat pre or post workout



Ingredients


  • 1/4 cup walnuts

  • 1/2 cup of unsalted green pistachio

  • 2tbs of chia seeds

  • 2tbs of flax seeds

  • 1/2 cup of shredded coconut

  • 1/2 cup of medjool date (Pitted(

  • 3 tbs of raw cocoa powder 2 tbs of cold pressed organic coconut oil

  • 3 tbs of maca powder

  • 1/2 tsp of vanilla extract


Method

  1. In a food processor, process walnuts and pistachio and half of the coconut and a pinch of sea salt until fine

2. Add the dates, cocoa, coconut oil, maca and vanilla


3. Process until the mixture holds together well


4. Scoop out a round teaspoon of the dough and and roll in you palm to form a ball, roll it in the remaining coconut until covered. Repeat till dough is fully used


5.Store in the refrigerator for up to a week or freeze for up to 2 months
