Healthy Vegetable Burrito

  • 1/2 cup chopped onions

  • 1 cup chopped green bell peppers

  • 1 cup chopped mushrooms

  • 1 cup diced tomatoes

  • Cor

  • 3 cups baby spinach or kale

  • 250g of tofu

  • 1 tablespoon nutritional yeast (optional)

  • 1 teaspoon salt (according to taste)

  • Pinch of pepper

  • 2 wholegrain tortillas


  1. Water sauté onions, peppers mushrooms and tomatoes until onions are translucent

2. Add greens and continue cooking until wilted

3. Squeeze water out of tofu and crumble over vegetable mixture, cook until tofu is starting to turn golden

4. Stir in seasonings and nutritional yeast

5. Spread mixture or tortillas and roll up to form burrito, serve with homemade guacamole and salsa.
