
Prep time : 20 min Total time : 8 hrs as it includes soaking of chia seeds Serves : 6 small glass containers.
Ingredients:
2 cups organic Almond milk( unsweetened, free of preservatives)
1/2cup + 2tbsp Chia seeds
1 vanilla bean/11/2tsp alcohol free vanilla essence
½ tsp cinnamon
½ tsp cardamom
Few strands of saffron
3 to 4 chopped medjool dates( adjust according to your sweetness preference)
12 blue berries
6 sprigs of mint
few almond flakes
Instructions:
In a food processor mix together dates, almond milk,vanilla bean, vanilla essence. To this mixture add chia seeds. Mix well and chill in refrigerator for 8 hours or overnight.
To the mango purée add cardamom & saffron and mix well. Chill in refrigerator. I used Alphonso mango
Once chia seed is soaked and the mixture looks thick and gelatinous you are ready to assemble the pudding.
In a small glass cup start layering with mango purée , then chia seed pudding, make 4 alternate layer.
Top with a dash of mango purée, 2 blueberries and a mint spring. Sprinkle around the rim almond flakes. Serve chilled.
